Quick Black Bean Salad

Another delicious salad for a hot summer day!



Serves 4

2 (16-oz) cans black beans, rinsed and drained
1 large tomato, chopped
1 package of frozen corn (or 1-2 cups fresh sweet corn cut off the cob)
1/2 vidalia onion, chopped
1 can sliced water chestnuts
1 bunch cilantro, chopped
1/2 lime, juice/zest
3 T balsamic vinegar

Mix it all together and serve chilled.  Refrigerating for a little while is nice to let the flavors blend.

So easy and so tasty!
