3/4 c. quinoa
1 1/2 c. water
1/2t salt
1 red bell pepper, diced
1 can black beans, rinsed and drained
1/2 c. sliced green onions
1/2 c. chopped cilantro
dressing:
2T lime juice
1t spike seasoning (optional)
1t ground cumin
1/2t chile powder
fresh ground pepper to taste
1/4 c. extra virgin olive oil
